I'm planning to tow a heavy 5th wheel with this truck:

2019 RAM 3500 MegaCab - Longhorn - DUAL Rear Wheel - 6’4” Box
H.O. Cummins 1000 ft lb torque, Aisin Transmission

Here are my truck's capacities:

Axle Ratio: 4.10
GVWR 14,000 lbs
Curb Weight: 8,978 lbs
Max Payload: 5,022 lbs (weight of passengers, cargo, & 5th wheel pin weight)
Est Curb Wt Front: 5,207 lbs. (58%)
Est Curb Wt Rear: 3,771 lbs. (42%)

GAWR Front 6,000 lbs
GAWR Rear 9,750 lbs

Tire Wt Rating 3,085 lbs. single or 2,835 lbs dual

GCWR 43,000 lbs
Max Trailer WR 35,100 lbs

Base Wt TOTAL 7,430 lbs.
Base Wt Front 4,324 lbs (58%)
Base Wt Rear 3,106 lbs (42%)

Does the tire rating mean that EACH of the FOUR rear tires are rated at 2,835 lbs., for a total capacity of 11,340 lbs for the FOUR rear tires, combined? (Thus, my rear tire's weight capacity exceeds my rear axle capacity?)

Do these numbers indicate that my estimated available cargo capacity on rear axle is about 5,979 lbs. (Rear GAWR of 9,750 - Est curb wt rear of 3,771 = approx. 5,979 lbs.)

Yes, EACH tire is rated for 2835#'s for a total of 11,340. I'd go with Continental or Michelin when time for tires. YMMV

The Michelin tires on my F-350 have a 2910 lb dual rating. You will be fine with the tires you have.
