Ceiling Insulation Slide Out

A couple of ceiling LED puck lights on the dinning slide show marks where one of three screw heads holding the the fixture have rusted. Removing the fixture there is no moisture under the slide roof and the screw threads have not rusted.

Therefore after finding only about one inch of batting as insulation between the slide top and ceiling tile, I can only surmise that the screw heads are getting moist with cold outside and warm inside temps.

Other than stainless screws I don't see any way to fix the issue or to increase the r value on the slide roof? I know the outside walls are well insulated but what about the ceilings and floors on the slide outs? For example one rubber wiper seal on the off door slide floor, that I knew about.
