Holding Tank Question

We are considering purchasing a 5th wheel to use when we are in town and parking it at our son's home. We would run electric and water hookups from his residence. The issue is how we handle grey and black water. We can not tie in to his septic system due to a significant elevation change. The residence is higher in elevation. We are considering installing a 1000 gallon holding tank and having it pumped on a regular basis. Is this practical? There would be two people 8-10 days per month and one person an additional 10-12 days per month. Any "best quess's" on how often it may need to be pumped? I realize there are several factors that impact it and we would not use our son's home for showers, dish cleaning or bathroom facilities. Thank you
