Desk for working remotely

My wife is a medical transcriptionest who works at home. In two months, we will be full-time RVs. She will need a small lightweight desk on wheels, with a sliding keyboard tray, room for docking station, laptop, monitor, and reference books. The desk needs to be small enough to store when we head out on the road. Are RV desks available or do we need to have it custom built?

We have a coffee table with a moveable top. Typically people buy it for an extra place to feed 2 people but I use it for a desk. It has lots of storage under the top as well. I use a lap desk to hold the computer and sit in my recliner or on the coach. When I'm all done, everything goes back in the storage area under the table top.
