I moved (reversed) ours so that they are only used for travel. The doors work normal until we move, then I push the left all the way to the right and latch it open and then push the right all the way to the left until it latches. I filled the old holes and it look like it was built that way.

The great part about this is that you are not having to unlatch each and every time you get in the closet and the doors will close all the way tight to the jamb.

Another way would be to remove the latch and use a "drop rod" in the track for travel to restrict movement, like many have done with patio doors.
