Has anyone ever heard of a rig tipping over from taking a curve too fast.

No, have not. The situation more apt to occur in a sharp curve is the trailer pushing the tow vehicle when brakes are applied. Most of the mass is down low on a fifth wheel unlike the potential high mass loaded in a semi-trailer.
If you are concerned with your new trailer, then care taken to note the warning signs and applying the trailer brakes only might help get through a tight curve.
Most of the places you could get into trouble like that would be exit ramps off the interstates, where you are both curving hard and maybe heading downhill.

Absolutely! It happens all the time. I am currently parked at Paul Cross Indiana Interstate getting a new frig installed. There is a fairly new Montana parked here that has the whole right side messed up from falling over on a curve. Happens more in a semi, but happens a lot in travel trailers and fifth wheels.
