Surprisingly the dish-drawer although working well, only uses less than 2 gal. of water. We use ours nearly daily.
On the running gear, you didn't mention the amount of actual travel you intend on doing? More, EoH disc brakes are highly recommended on the size / weight you're mentioning. MorRyde I S and pin-box work well together. Regardless of number of axles, LR-H tires.

You should be able to get a rear hitch receiver capable of a couple hundred> lbs.
Many units have decent showers these days. Perhaps not for everyone but we've had excellent service from the Truma AquaHot on-demand water heater.
